In 2015, the Colorado Restaurant Association estimates that approximately 235 new fast-casual restaurants opened in the Denver/Boulder metro area. In 2016, that restaurant scene is as hot and popular as ever. Some restaurants are more popular than others, as demonstrated by data from Foodable Labs and the Restaurant Social Media Index, which tracks hundreds of thousands of restaurants.
Brand new to the list, and landing in first for its debut, is The Preservery, which aims to bring people together through food and music, creating a sense of community. The food here is made from “storied ingredients” – from scratch with known origins of every item.
“…whether it comes from the urban farmer down the street or it's a fairly traded spice from the other side of the world, each of our ingredients has a story worth telling and re-telling,” according to the website. These ingredients are showcased in dishes like Yarmony Ranch steak and short ribs, and Niman Ranch pork tenderloin with hakurei turnip and smoked cherry agrodolce.
There are four other brand-newcomers to the list: Bar Dough, an Italian restaurant that raises the bar on traditional cuisine with small plates, handmade pasta, wood-fired pizza, and Italian-inspired cocktails; MAS KAOS Pizzeria & Taqueria, a farm-to-table pizza and taco place serving house-brewed craft beer and artisanal tequilas; Homegrown Tap & Dough, known for using only fresh, high-quality ingredients in its house made pasta and pizza; and Los Chigones, a twist on traditional tapas-style Mexican favorites described as “sassy, spicy, sometimes irreverent, [but] always an adventure.”
